  1. Finely chop all vegetables, par boil green peas.
  2. Assemble all ingredients
  3. Boil potatoes, mash it and keep aside.
  4. In moderately heated pan, add butter, add cumin seeds and allow to crackle, then add chopped onion and sauté till translucent.
  5. Now add ginger garlic paste and sauté till rawness goes off. Then add all veggies except tomato, cabbage and green peas. Sauté for 4-5 minutes by adding salt.
  6. Now add chopped capsicum + cabbage and sauté for 2-3 minutes.
  7. Now add tomatoes + green peas, mix well and sauté for 2-3 minutes.
  8. Now add all spices and mix well, stir fry for 4-5 minutes till spices release oil. During this stage, mash veggies as much as possible. I prefer chunky, so mashed lightly.
  9. Now add mashed potato and mix well.
  10. Now add warm water as per requirement (preferred gravy consistency) and cook / simmer for 3-4 minutes.
  11. Now add chopped coriander
  12. Lastly add lemon juice + butter, mix well and bhaji is ready.
  13. Toast pav in sufficient butter by add pav bhaji masala, toast nicely and serve with bhaji along with finely chopped onion and lemon pieces.
