- 1 cup chopped / diced carrot
- 1 cup chopped French beans
- 1 cup green peas
- 9-10 cauliflower florets
- 1/2 cup sweet corn kernels
- 1 small capsicum
- 1 medium potato cut into cubes
- 1 medium tomato,
- 5 green chilli
- 1/2 tsp cumin seeds,
- 1 dry red chilli,
- 3 cardamom,
- 5 pepper corns,
- 5 cloves,
- 2 bay leaf,
- 2 small cinnamon stick
- 1/2 tsp coriander powder,
- 1/2 tsp cumin powder,
- 1/2 tsp hing,
- 1/2 tsp garam masala,
- 1 tsp kasuri methi
- 2 inch ginger,
- 150 - 200 grams paneer
- For paste
- 15 cashew,
- 8 almonds,
- 3 tsp poppy seeds,
- 4 tbsp milk
- 1/4 cup fresh cream/ malai
- 1 cup milk,
- 2 tsp sugar
- 2 tbsp oil
- 2 tbsp ghee + 1 tbsp oil
- 10 raisins
Steps to make to make Navratan Korma
- Assemble all vegetables and other ingredients. Marinade paneer pieces in salt for 10 -15 minutes.
- Assemble all ingredients, make a paste of tomatoes + green chilli + ginger.
- Make a paste of soaked cashews + almonds + poppy seeds + milk
- Par boil all vegetables except capsicum and sweet corn, drain excess water and keep aside.
- Fry raisins in oil and keep aside. Fry marinaded paneer till golden yellow and keep aside.
- In moderately heated pan/ kadhai, add oil +ghee and add all whole spices and allow to crackle and turn aromatic, then add the tomato paste and stir fry till oil appears on surface. Then add all the veggies + capsicum + sweet corn + salt and sauté for 5-6 minutes. Veggies will turn tender.

- Now add all spices,mix well and stir fry till spices fried well, add milk and mix well. Cook for 3-4 minutes under medium flame.
- Now add cashews almonds paste + garam masala + sugar + salt, mix well and simmer for 2-3 minutes, then add paneer + Malai +Kasuri Methi, stir well and simmer for 1-2 minutes.
- Keep in stand by mode for 2 minutes and Navratan Korma is ready.
- Serve with paratha/ naan/ rice / Pulao, etc
