- 3 slit green chilli
- 4.5 cups water + 1/2 cup water (if required)
- 1 small bowl green peas
- 2 medium onion,
- 1 tbsp ginger garlic paste
- 1 big bay leaf,
- 3 cardamom,
- 1 cinnamon stick,
- 5 cloves
- 3-4 tbsp ghee
Instructions to make to make Vegetable Masala Pulao
- Roughly chop onion and assemble all ingredients and soak rice for 15 - 20 minutes.
- In moderate heated pan / deep kadhai, add ghee and add all whole spices, let cumin crackle and all spices turn fragrant, then add onion and stir fry under medium flame till light golden brown.
- Then add ginger garlic paste and sauté till rawness goes off, then add all vegetables + 1 green chilli + little salt and stir fry for 3-4 minutes.
- Now add all dry spices + salt and stir fry till masala leaves oil and turns aromatic. This step takes around 3-4 minutes.
- Now add soaked rice, mix gently and add salt (if required) and fry for 2 minutes.
- Now add 4 cups warm water + green chilli and mix nicely. Now cook rice under medium flame for 6 - 7 minutes.
- Rice will puff up slightly, now cover and cook for 7-8 minutes but check in between whether rice have cooked or not. If required add little more water.
- Switch off flame and keep in stand by mode for 3-4 minutes.
- Now Vegetable Masala Pulao is ready to serve or to be packed for lunch box.
