- Heat the oven to 210c.
- Mix the leek, cheese, breadcrumbs, parsley, egg and mustard. Season with a pinch of salt and a couple of grinds of pepper.
- Gradually add the milk. You may not need 2 tbsp. The mix should just hold its shape when you bring it together. Half the mix.
- Roll out the pastry. The easiest way - and the way that prevents thick pastry that usually ends up being undercooked - is to roll it out to a large rectangle - about 40x30cm more or less.
- Have the short end nearest to you. Then spoon half the mix down one side of the long edges of the pastry. About 1-2 cm from the edge. Then do the same the other side. Pack the mix quite tightly - like a sausage.
- Brush the pastry in between the ‘sausages’ with some of the egg yolk.
- Fold each side in. So from the outer edge over the ‘sausage’ to the middle. Cut the pastry down the middle to separate the two rolls.

- Put on a lined baking tray and bake for about 30 mins. They go golden but you still need to make sure the pastry’s cooked. Sometimes they look ready but the pastry cam be still raw 🙀
