- 1/2 cup Chopped carrots
- 1/2 cup Chopped French beans
- 1 cup Cauliflower florets
- 1/2 cup Peas
- 2 Chopped onions medium
- 2 Chopped tomatoes small
- 1 tsp Grated ginger
- 1 tsp Grated garlic
- 1 tablespoon Cooking oil
- 1 tsp Cumin seeds
- 1 Cinnamon small piece
- 1 tsp Fennel seeds
- 4-5 Black pepper
- 1 Bay leaf
- 1 Red chilli dry
- 1 tsp Chilli powder
- 1 tsp each Cumin and coriander powder
- 1/2 tsp Garam masala
- as per taste Salt
- For white gravy paste
- 1/2 cup Fresh grated coconut
- 1/4 cup Chopped cashews
- 1/4 cup Poppy seeds
- 1 Cinnamon small piece
- 1 tsp Fennel seeds
- as required Water to blend
- as required Chopped coriander leaves to garnish
- For Parotta
- 1 cup Whole wheat flour
- 2 tablespoons Cooking oil
- as per taste Salt
- as required Water to mix dough
- 1 tsp Wheat flour for each Parotta
- 2 tsp Cooking oil for each Parotta
Steps to make to make Veg Korma and Parotta
- First, blend all the ingredients mentioned for white gravy and prepare a smooth and thick paste with sufficient water. Keep ready.
- Heat a pan. Add oil
- Then add tomatoes and cook till soft. Now add all the vegetables and stir cook for 5 minutes till well coated.
- Now add the spice powders and mix well. Add 1 cup hot water and cook covered for 5 to 8 minutes.
- Then add the gravy paste, mix well and add 1/2 cup more water. Cook covered till vegetables are done completely. Adjust seasoninns and mix well.
- Serve in bowl garnished with chopped coriander leaves. Serve hot Parotta along with veg Korma.
- For Parotta: Mix all ingredients and bind to a soft dough.
- Keep covered for 15 minutes. Then roll out a round disc from a ball sized portion.
- Spread 1 tsp oil and on top sprinkle 1 tsp flour. Fold in triangle 📐 shape and roll to a thick paratha in traingle shape.
- Roast on hot griddle till cooked on both sides. Add 1 tsp oil from sides, roast for 1 minute and then serve with Korma. Make all prottas in similar way. Pack in lunchbox (curry in airtight box and Parotta in foil wrap)Enjoy your lunchbox!
