  1. First of all, if you are taking sevai, dry roast it in a pan. But I have taken readymade roasted vermicelli here. So it doesn't need to be roasted.
  2. Now add oil to a pan and when it gets hot, add cumin seeds, mustard seeds and suate, dry red whole chillies, chopped green chillies and sweet curry leaves and mix well.
  3. Now add roasted peanuts, grated carrots, boiled corn kernels, French beans, capsicum pieces and cook on medium heat for 2 to 3 minutes.
  4. Then add turmeric powder, red chilly powder, tomato ketchup and red chili flakes and cook for 1 to 2 minutes.
  5. Then add roasted vermicelli and mix. Now add salt and lemon juice and cook for 1 minute, stirring with a spoon.
  6. Now add water and mix everything. Cover and cook on medium to low flame for 5 to 6 minutes. (But keep stirring and checking in between) Cook until all the water has evaporated.
  7. Now turn off the gas flame, add green coriander leaves on top and mix everything well.
  8. Now our healthy breakfast is ready to serve. Garnish with this vermicelli upma with green coriander leaves and lemon slices.
