Ingredients and spices that need to be Take to make Maharashtrian Masale Bhaat:
- 2 Cups Basmati Rice
- 1 large Onion, finely chopped
- 1 . 5 tsp Ginger- Garlic Paste (optional)
- 1 Tomato, finely chopped
- 2 Green Chillies, slut from the middle
- 1 Carrot, finely diced
- 6-8 French Beans, stalks removed & chopped into small pieces
- 1 cup Fresh Peas
- 2 Bay Leaves
- 1/2 tsp Cumin Seeds
- 1/2 tsp Mustard Seeds
- 1/4 tsp Asafoetida Powder
- 10-12 Curry Leaves
- 1/2 tsp Turmeric Powder
- 1/4 tsp Red Chilli Powder
- 1 tsp Coriander Powder
- 2 tbsp Goda Masala Powder
- 3/4 Cup Coconut, Freshly grated
- 2 tbsp Dry roasted Peanut, powdered
- 1/4 cup Fresh Coriander,finely chopped
- 10-12 , Cashews, fried in a little ghee until golden brown
- Salt to taste
- 1/4 tsp Sugar
- Water, as required
- 2 tbsp Ghee
- For the Masala Powder:
- 2 tsp Coriander Seeds
- 2-3 Cinnamon Sticks
- 4 Cloves
- 1 tsp Cumin Seeds
Instructions to make to make Maharashtrian Masale Bhaat
- Wash & soak the rice in water for half an hour.
- Dry roast the ingredients for the masala till they turn aromatic and brown. Allow the roasted spices to cool.
- Coarsely powder the roasted masala, you can dry grind in a blender too. Set aside the ready masala powder.
- Heat ghee in a deep cooking pan. Add the bay leaves, cumin, mustard, asafoetida, slit green chillies & curry leaves. Allow it to crackle for a few seconds.
- Add the chopped ginger garlic and saute for 30 seconds. Add the sliced onions, saute until pink.
- Add the tomatoes, saute & cook for 2-3 mins until soft.
- Add the carrots, beans & peas, mix well & cook. You can add potatoes and any other veggies of choice like tendli or eggplants.
- Add the turmeric, coriander, red chilli & goda masala powders, add salt & sugar. Mix well.
- Add the ready masala powder, mix well.
- Now add the rice, reserving the water used to soak it. Stir briskly.
- Add 1/4 cup grated coconut, the reserved water and some more water as required, mix. Also stir in the peanut powder & some of the chopped fresh coriander.
- Cover & cook on sim for 10-12 mins or until done.
- Garnish with the remaining chopped coriander and coconut, sprinkling some fried Kaju. Serve with light Maharashtrian Kadhi or plain curd. P..S. : You must top with a dollop of ghee while serving. 😍😋
- You can also serve it as part of a traditional Maharashtrian Menu, as it is a must have dish for any festive meal.
