  1. Heat oil in a pan and fry onion, garlic and ginger for 2 - 3 minutes.
  2. Add in chopped veggies and stir fry till veggies are half cooked.
  3. Add soy sauce, red chilli sauce, vinegar, sugar, salt and mix well.
  4. Add enough water and boil till all flavors are absorbed.
  5. Mix cornflour and water in a bowl.
  6. Pour this cornflour mixture into the veggies pan and cook for another 2 - 3 minutes.
  7. Check the soup consistency.
  8. Finally, add spring onion, fried noodles and serve hot and sour soup when it is hot.
