- For the Manchurian :-
- we need finely chopped vegetables mentioned below :-
- 1 carrot peeled & chopped fine
- 1/2 cup cabbage
- 1/2 capsicum
- 10 French beans
- 3 Baby corn
- 1/2 cup Maida
- 2 tbsp Cornflour
- 1 tbsp ginger garlic paste
- 1/2 tsp red chilli powder
- 1/2 tbsp black pepper powder
- 2 tbsp water
- to taste Salt
- 1 to 2 tsp Oil as per need for cooking (adjust accordingly)
- For the Manchurian sauce :-
- 1/2 cup spring onion greens or 1 onion finely chopped
- 1/2 capsicum chopped
- 1 tbsp ginger and garlic chopped
- 2 green chillies chopped fine
- 1 tbsp soya sauce
- 1 tsp red chilli sauce
- 1 tsp green chilli sauce
- 1 tbsp vinegar
- 1 tbsp tomato sauce
- 1 packet Ching’s Veg Manchurian masala
- 1/4 tbsp black pepper powder
- as per taste Salt
- As required Coriander leaves or spring onion greens for garnish
- 1 tbsp oil
Steps to make to make Vegetable Manchurian Dry style
- Take the chopped vegetables and put them in a big mixing bowl.
- Then add cornflour, maida, ginger garlic paste, salt, red chilli powder & black pepper powder. Mix everything well with a spoon.
- Sprinkle very few drops of water and then knead everything together.
- Then grease your palms and make small balls and keep them on a plate.
- As I made the healthy version I used an Appe pan. Put a drop or more of oil in each cavity of the appe pan and place the vegetable balls in each cavity.
- Then cover the Appe pan and cook them on low to medium flame. Then flip them carefully when cooked from one side and repeat the same procedure for the other side also. Drizzle little oil on the other side and cook till they turn brown and crisp from all sides. Remove them carefully on a plate and keep aside.
- Now for making the sauce heat a wok or pan put oil. When it gets heated we’ll add the chopped spring onion greens, garlic, ginger and green chillies. Sauté for about 2 to 3 minutes.
- Then add the chopped capsicum. Cook it on high flame for a minute.
- Next add all the chilli sauces - red, green & soya sauce. Add little salt, black pepper powder and the Ching’s masala powder.
- Then add little water and mix everything well. The sauce will start thickening.
- Now add the Appe pan fried Manchurian balls in the sauce and mix gently such that they all get coated well with the sauces.
- Garnish with chopped coriander leaves or spring onion greens and serve immediately. Enjoy this dish with your family.
- Tip :- If you wish to deep fry the Manchurian balls you can do that also. Remove them on a kitchen tissue / absorbent paper if deep frying them and use them as required in the recipe. The Method of making the sauce will be the same in this case.
