  1. 1 cup Pigeon Pea Lentils
  2. 1/4 cup Red Lentils or Masoor Daal
  3. 2 tbsp Sambar Masala powder
  4. 2 tbsp shredded Ginger
  5. 1 tbsp Red Chilli powder
  6. 2 tsp Salt or to taste
  7. 1/2 tsp Turmeric powder
  8. 2-3 tbsp Oil
  9. 1 Onion thinly sliced
  10. 1/2 cup Drumstick pieces
  11. 1/2 cup French Beans cut lengthwise
  12. 1/2 cup Long Beans cut lengthwise
  13. 1/2 cup Okra cut lengthwise
  14. 1/4 cup Yam cubes
  15. 1/4 cup Brinjal cut lengthwise
  16. 1/4 cup Cauliflower florets
  17. 1/4 cup Bottle Gourd pieces
  18. 1/4 cup Tamarind pulp
  19. 2 tsp Black Mustard Seeds
  20. 1/8 tsp Asafoetida or Hing
  21. 4-5 Dry Red Chillies
  22. 2 Sprigs Curry Leaves
  23. 2-3 tbsp chopped Coriander Leaves

Steps to make to make One Pot Sambar

  1. Wash and soak both the dals for 2 hours. In a pressure cooker, heat oil and add black mustard seeds and shredded ginger.
  2. Followed by asafoetida, curry leaves and dry red chillies. Now add sliced onion. Saute all of that for a minute or two. Now add all the vegetables. Saute these for about 3-4 minutes.
  3. Add all the powdered spices too. Finally add both the soaked dals and tamarind pulp. Add enough water to cover everything. Adjust salt and pressure cook it for 5-6 whistles.
  4. Let the pressure settle down before opening the lid. Cook on a high heat now. Add hot water to adjust the consistency according to your choice if required. Otherwise just simmer for about 4-5 minutes more.
  5. Garnish with coriander leaves. Serve hot with plain rice, idli, dosa etc. Yum!
