- 50 gms French beans
- 50 gms cauliflower

- 1 potato
- 1/2 cup green peas
- 3 onions
- 3 tomatoes
- 8 garlic cloves
- 1 inch ginger
- For Spices
- 4 lavang (cloves)
- 10 Mari (black pepper)
- 4 elaichi (cardamon)
- 1 star phool (anise star)
- 1/2 inch cinnamon stick
- 8 cashews
- 2 spoon magaj (white small seeds)
- 8 dry red Chilli
- As needed Butter & oil for sabji
- 1/2 spoon haldi powder
- 1 spoon kashmiri red Chilli powder
- 1 spoon dhsna jeera powder
- 1 spoon kitchen king masala
- as per taste Salt
Instructions to make to make Veg kolhapuri sabji
- Cut all veggies & add dry red Chilli in water & boil for 2 minutes.
- Cut onions & tomatoes & take all spices on the plate.
- Take oil in a pan (2 spoons) stir fry all spices one by one & Then add onions & ginger.
- Then when onions become translucent then add tomatoes & stir Then till they are soft Then add cashews & magaj Allow the mixture to cool.
- Now take a mixture jar and make red Chilli paste The red chilies which we had boiled remove from water & add in mixie & add garlic & make a smooth paste.
- Then onion & tomato mixture which we had stir fry in a pan put it in mixture jar & make a fine paste.
- Add four spoons of oil to pan & stir all veggies one by one First stir fry paneer, then potatoes & cauliflower, then French beans, carrots & green peas Stir them on low flame for 7 to 8 minutes till they are partially cooked.
- Now take this veggie in a bowl & y aside Take 3 spoons of oil & 1 spoon Amul butter in a pan & add cumin seeds then tej Patta & Then put capsicum in it Stir it continuously till capsicum is cooked.
- Now add dry red Chilli paste in this & stir it to oil ozoosez out from it Then add red Chilli powder, haldi powder, dhania jeera powder & kitchen king masala Stir it for few seconds then add onion & tomato paste to it.
- Now when oil is separated from the mixture add all stir fry veggies in it & stir for again two minutes.
- Then add coriander in it & 1 cup hot water In it & stir it properly & simmer the sabji for 10 to 15 minutes by closing the lid on.
- Now mix it properly & adjust the consistency If it is very thick then add hot water to it & make tadka For it heats two spoons of butter and one spoon of oil in a tadka pan Add two dry red Chilli, Kashmiri red Chilli powder (1/2 spoon) & chopped coriander & add this tadka to prepared sabji Mix it well.
