- Now take the basmati rice in a big bowl and wash the rice well 2 to 3 times and then soak it for about 15 minutes and drain later and keep it aside.
- Heat a big non-stick deep pan and put the olive oil & butter in it
- When it gets heated add in the chopped onion, green chillies, ginger and garlic. Then sauté them well for about 2 to 3 minutes
- Then add the chopped tomatoes, salt, pepper powder and the chopped beans and carrots.
- Now add to this the drained basmati rice. And fry for 5 minutes on low to medium flame. Add a tablespoon of the seasoning or Ching’s fried rice Masala and mix everything well.
- In the meantime take another non-stick pan and put little oil in it. When hot add the cubes of paneer & bell-peppers. Sprinkle a bit of salt, black pepper powder and seasoning on the paneer and sauté till they fry well (say 3 to 5 minutes) and turn off the heat.
- Now add the measured amount of water to the rice pan and cover and cook till it is 3/4 th done. Reduce the flame to low to medium.
- Then open the rice pan, check the rice & add to this the fried paneer & bell pepper cubes. Give a mix carefully. And then cook on low to medium flame again for another 2 to 4 minutes.
- When cooked turn off the heat and let it rest for a few minutes.
- Garnish with chopped coriander leaves.
- Serve hot with ketchup or chilli sauce or any raita of your choice.
